Who would have thought that something so healthy could be so delicious? These brownies are fudgy, sweet and so easy to make. Black beans, dates and cocoa topped with chocolate avocado mousse. Sprinkle them with chopped raw pistachios and dried goji berries.
Take them to gatherings and share them. There will be no left overs!
INGREDIENTS
Base
2 cups cooked or canned (no-salt) black beans
1 cup loosely packed peeled cooked and cooled sweet potato
10 medjool dates, pitted
1 teaspoon vanilla
1/2 cup cacao or cocoa powder*
1 tablespoon ground flaxseeds
Frosting
1 ripe avocado
3 tablespoons maple syrup
2 tablespoons cacao or coco powder
1 teaspoon pure vanilla extract
METHOD
Base
Preheat oven to 160 degrees Celsius. Soak medjool dates in hot water for a few minutes to help soften. Drain but reserve soaking liquid. In a food processor, puree all the ingredients until completely smooth, adding some of the soaking liquid if required. Bake for 35-40 minutes or until slightly firm to the touch, but not too dry.
Icing
Place the avocado, cacao, maple syrup and vanilla into a blender. Puree until as smooth as possible. Transfer to a container and refrigerate until ready to use on the brownies. Garnish with chopped nuts, goji berries or anything you desire!
*Cacao powder has higher nutritional value, where as cocoa has a slight less bitter taste. Use depending on your preference.
