Banana waffles with warm chocolate sauce

Is there a better way to start the weekend than with banana waffles? Bananas are naturally sweet and are a healthy source of fiber, potassium, vitamin B6, vitamin C, and various antioxidants and phytonutrients. These are gluten free and low in fat and everyone loves them.

INGREDIENTS

Waffle batter

  • 1 ripe banana

  • 1 1/2 cups plant milk

  • 1 tsp vanilla

  • 1 tbsp psyllium husk

  • 1 cup buckwheat flour

  • 1 cup brown rice flour

  • 2 tablespoons coconut sugar

  • 2 tsp baking powder

  • ¼ tsp cinnamon

Warm chocolate sauce

  • 1/2 cup water

  • 1/4 cup coconut sugar

  • 1/4 cup cocoa

  • 1 tbsp corn flour

  • 1 teaspoon vanilla extract

  • Pinch of salt

METHOD

  1. To make the waffle batter, mix the wet ingredients in a small bowl. Mix the dry ingredients together in a large bowl. Add the wet to the dry ingredients. Mix to form a thick cake-like batter, adding more plant milk if needed. Spoon onto a preheated non-stick waffle maker and cook for 4 minutes.

  2. To make the chocolate sauce, combine water, sugar, cocoa, corn flour, vanilla and salt in a small saucepan. Whisk to ensure there are no lumps. Place over medium heat and bring to a gentle simmer for 5 minutes, stirring often. The sauce will continue to thicken as it cools. This sauce lasts for up to one week in the refrigerator.

  3. When the waffles are cooked, serve with slices of banana and a drizzle of chocolate sauce. Enjoy!
