In the 1970s, after dinner mints were a very cool item to have at the end of a dinner party! Even though I was just a child (I'm not that old!) I remember them well. This much healthier version is packed with antioxidants, fibre and omega 3s. Your guests will love them!
INGREDIENTS
1 cup walnuts
1 cup medjool dates, pitted
½ cup coco or cacao
4 drops pure peppermint essential oil (food grade)
pinch of sea salt
METHOD
Place the walnuts in a food processor and process until very smooth, almost to the consistency of a walnut butter.
Add the dates and pulse to combine.
Add in the cocoa, peppermint essential oil and sea salt. Process until the mixture forms a ball.
Roll the ‘dough’ between two sheets of baking paper until half a centimeter thick. Place on a tray in the freezer to firm up.
Cut the dough into squares with a sharp knife. You will need to wipe the knife between each cut to make clean edges.
These will keep in the fridge for a week or longer in the freezer.
