After dinner mints

In the 1970s, after dinner mints were a very cool item to have at the end of a dinner party! Even though I was just a child (I'm not that old!) I remember them well. This much healthier version is packed with antioxidants, fibre and omega 3s. Your guests will love them!

INGREDIENTS


METHOD

  1. Place the walnuts in a food processor and process until very smooth, almost to the consistency of a walnut butter.

  2. Add the dates and pulse to combine.

  3. Add in the cocoa, peppermint essential oil and sea salt. Process until the mixture forms a ball.

  4. Roll the ‘dough’ between two sheets of baking paper until half a centimeter thick. Place on a tray in the freezer to firm up.

  5. Cut the dough into squares with a sharp knife. You will need to wipe the knife between each cut to make clean edges.

  6. These will keep in the fridge for a week or longer in the freezer.
