Carrot cake waffles (gluten and oil free)

These gluten free waffles are made from whole food, plant-based ingredients and are cooked in a nonstick waffle maker, no oil required. They are filled with spices and are crunchy on the outside and soft on the inside. Enjoy with some nut butter, home made soy yoghurt and fruit!

INGREDIENTS

½ cup buckwheat flour

½ cup sorghum flour

½ cup brown rice flour

2T panela sugar

2T ground flaxseeds

2T currants

1t ground cinnamon

½t ground allspice

1/4 t ground cloves

1/4 t ground cardomom

1t baking powder

½t bicarb soda

2 finely grated carrots

1 cup almond milk (or more if required)

1T apple cider vinegar


METHOD

Mix dry ingredients. Mix wet ingredients. Add wet to dry ingredients. Mix to form a thick batter, adding more plant milk or water if needed. Spoon onto a preheated waffle maker for 7 mins. Enjoy!
